Simple Baked Black Cod
Serving 2 people
- 1 lb. black cod fillet
- 1 tbl. olive oil
- a couple of pinches of salt
- a couple of pinches of black pepper
- optional: a pinch of saffron threads
Preheat the oven to 400 degrees fahrenheit.
Place black cod on a piece of aluminum foil large enough to generously close completely around the fish to form a steam pack. Before closing the foil, sprinkle fish with salt, pepper, saffron, and drizzle with olive oil.
Bake for 12-15 minutes, until just slightly flaky and no longer translucent. Be very careful not to over-bake.
Open foil to release steam and allow fish to rest for 2-3 minutes before serving.
